hello beloved friends welcome back to
the unity garden kitchen today we’re
going to make my version of homemade
vegan rice-a-roni if we haven’t met yet
my name is stephanie bandozik i’m a
reiki healer and energy alchemist and a
storyteller from upstate new york i love
all things natural wellness and today we
are going to make a healthy vegan
rice-a-roni
i have a pan
with olive oil
garlic and onions and i am going to put
these on a medium to medium-high heat
until they are translucent that’s step
one
while my olive oil garlic and onions are
heating up on the stove i am preparing
the next three ingredients
i have one cup each of the next three
ingredients and again feel free to
substitute if this isn’t what you have
or this isn’t what you like to use
i am using one cup
of jasmine rice you can use any long
grain rice that you like i love the
flavor of jasmine rice so i have one cup
of jasmine rice
i have one cup
of organic brown
rice i love the health benefits of whole
foods including brown rice and so i have
one cup of organic
brown rice if you don’t like brown rice
or you don’t have it go ahead and use
two cups of whatever rice you prefer
and then
for the roni
i have one cup
of organic whole wheat spaghetti that i
have crumbled up into little pieces
so the ratio again is
one cup of spaghetti
two cups of rice so if you’re going to
have this or you’re going to use
different ingredients and not three
separate ingredients like i am that’s
the ratio you want you want one cup of
the whole wheat spaghetti or any
spaghetti that you like and two cups of
rice i am using half brown rice one cup
and half jasmine rice one cup so that i
have a rounded out flavor palette as
well as some health benefits in there so
the fun part is you get to
squish up
that spaghetti into little pieces so
again one cup each brown rice
jasmine rice
and whole wheat spaghetti for me once my
onions
and
garlic are translucent i’m gonna add
this in to toast
okay my onions and garlic look and smell
amazing so we are going to add in the
rice and macaroni
mix that around
and let that have a good toast
while my rice and pasta are toasting
along with the onion and garlic i’m
gonna get my wet ingredients ready i
have one box of organic vegetable broth
and i need five and a half cups of
liquid total so this is four cups of
vegetable broth and i’m going to use
about a cup and a half of water so again
that’s three cups of dry
about five and a half cups of liquid and
i used one large white onion
and two heads of garlic because i like a
lot of garlic and onion you may want to
have this recipe if you’re only eating
for one or you’re going to only eat it
for one or two meals i like to batch
cook i do not like to cook a different
full meal every day i like to cook big
pots of ingredients every couple of days
and then mix and match it’s kind of my
version of meal planning tried the
traditional mail fanning i did not like
eating the same exact thing every day
but i loved that i wasn’t cooking every
single day so when i have time to make a
couple of dishes i make
one two maybe three dishes at a time and
i do that every couple of days so i
always have something fresh and i always
have something left over that i can mix
and match in different combinations so
i’m going to check on my toasting
rice and spaghetti and see if it’s ready
to put my liquid ingredients in
okay this has toasted up nicely it
smells delicious and it’s looking a lot
more brown than it was
so i’m gonna go ahead and add the wet
ingredients i’m gonna start with the
vegetable broth
that will add a lot of extra flavor
and some water to finish it off
okay with my liquid in my rice-a-roni
dish i’m down to the last few
ingredients and these are all for flavor
and for health so again if you don’t
like any of them substitute in your
favorites i am going to use cumin cumin
is one of my favorites i am going to use
turmeric with turmeric i always use
black pepper these go in almost every
savory dish i make because it’s great
for the anti-inflammatory properties so
if it’s a savory dish and i don’t think
the flavor will compete
the turmeric and the
black pepper always go in and then i’m
gonna add a little bit of toasted sesame
oil i love that flavor so
some cumin
some turmeric
some black pepper
and a little bit of toasted sesame oil
those are my last ingredients to go into
my dish while it cooks
so once i have
seasoned
i dip my spoon into the broth i give it
a little taste and make sure that i
enjoy it
i like a lot of strong flavors you and
your family may not so season to your
taste and then you’re going to put the
cover on put it on medium and wait until
all of the liquid is gone maybe 15 to 25
minutes depending on your oven
while this healthy vegan rice roni is
certainly delicious right off of the
stovetop i enjoy it even more the next
day i like to warm it up with a little
bit of coconut oil the coconut oil gives
it an even more buttery creamy flavor
and
there is some research that shows that
cooling your carbs and reheating them
makes them more resistant to starch so
if you warm up your pasta your rice your
potatoes after they have been
cooled down
so reheating them
has actually been shown to give you some
health benefits so that’s another reason
to love your leftovers are you a
leftover fan like ian’s you love to meal
